New York style baked vanilla cheesecake with Biscoff base, Biscoff drizzle and crumb

A classic NY Vanilla Cheesecake on a Biscoff base. Honestly, the smell of the Biscoff crust alone was worth the effort. It took me three attempt's to realise that Biscoff has a much higher butter/fat content than digestives... so I used much less butter for this one, and a Madagascan vanilla pod makes the flavour amazing! Hope you guys like it!
I'm a self employed electrical contractor for over 20 years, but I started baking - and fell in love with it during the 2020 covid lockdown.
I started with sponge cakes - and very quickly learned that they aren't simple... The crumb, the base, the air, the rise and the moistness are all as equally important!
Then I moved on to baked cheesecakes...
The technique of mixing cream cheese, flour, eggs, soured cream, sugars and fresh vanilla without splitting the mixture felt like an art for me. The response from friends and family that try my bakes is amazing! and gives me the dopamine boost to feel happy.
I was clinically diagnosed with Combined ADHD in May 2025, and Autism in August 2025.
I've tried in the past to bake at least once a week, but even when I've shopped for ingredients, procrastination steps in and it tends to be monthly to every two months.
I'm 51, and My AuDHD diagnosis was only prompted by my 3 Boy's (14, 17 and 21) all receiving neurodivergent clinical assessments in the last 18 months.
